At this point in the year I'm working on moving all the wines from this past harvest through their next step.


The red wine is now in barrel and I'm maintaining the barrel fill levels by "topping" them with the matching wine that I keep aside in a tank. If this isn't done frequently enough, the wine will oxidize and can go bad. I've also taken a few 2021 wines out of barrel in order to make room for the 2023 reds. 


The white wine that we harvested last fall is now getting ready to be bottled. So that means cold stabilization, filtration and making sure all the blends are perfect before we order all the empty bottles and other components to bottle it.
